Rob -

1.  Storage sounds like a good idea, assuming you add 
some props to hold the existing foam in place.

2.  If you decide to use any of the expanding foams 
anywhere in your boat, keep in mind that they can exert 
a lot of force as they expand.  They have been known to 
deform bulkheads and in one case, ripped the tabbing 
away from the hull.

Common wisdom is to add a small amount at a time, 
giving the prior dose time to fully expand before 
adding another.
