Rik,

You may be right.  I have mainly sailed on the Sound, where you can get 
large constant winds almost every day.  The wind is uninterrupted by 
trees, or shore line, and you try to sail across it, not down wind, 
holding the boat as flat as you can, so the boat transfers the power of 
the wind into forward motion.  To the extent you allow the wind to push 
your boat over, you lose power for forward motion, and the tipping of 
the sails allows wind to spill, rather than hit the full surface area of 
the sail.

Catamarans (and ice boats) can go faster than the speed of the wind by 
staying flat and sailing across it.

The waves don't help most of the time, and tend to be wind driven, so 
you have to cut across them, too.  However sometimes you can surf down 
them, or ride the crests and get a really fast, thrilling ride.
