Good question - batteries in any enclosed 
space could generate flamable hydrogen gas 
unless they are sealed.  Has not generally 
been a problem, as hydrogen rises.  

I trust that the door on your cabinet 
containing the stove is ventilated top and 
bottom to deal with any MINOR propane leak
(if there is such a thing).  Ideally, any 
propane tank should be stowed in a space 
vented to outside air, outside the hull.  
A piece of 4" pvc with end caps could be 
secured to a rail astern to provide safe 
storage.

A 12 gauge flare pistol doubles as a small 
rocket launcher.  The horizontal range is 
about the same distance as the law requires 
PWCs to stay clear of other vessels.  

For the bigger stuff, the classic VC (Viet 
Cong) tray launcher folds up pretty small, 
and will launch up to 2" munitions.  
Properly designed and constructed, the 
components could double as fender boards, 
thus becoming invisible to authorities.

The only remaining problem would be the 
burns on the deck where the launcher is 
set up.  A baseplate is probably in order,
doubling as a mushroom anchor.
