  The thing is, the portion of a kite string closest to the kite is often oriented nearly straight down ... as the line extends away from the kite toward the person flying it, that's where you see the line start to point toward the person.  That's why I'm wondering how this guy kept it framed so well ... the sailboat is right where you'd want it in the video frame ... it's almost as if the camera is adjusting as the shot goes on, but that's probably just an illusion.  I don't know how you'd rig a remote panning camera -- that's a much more involved and extremely heavy set up than just sticking a lipstick camera on a kite.

  I'd put the camera in a tube & attatch it to the string so it always points
