Thanks for the reply.  I did know about keeping the water tank full and have
done that.

When you motor at high speed, the action of prop tends dig the stern in a
little. You probably won't ever get more water than you got yesterday unless
you have more folks sitting in the stern with you. 
Because the R22 sails better with some weight in the bow, we do keep our
water tank about 2/3 full and store our spare anchor forward in the v-berth.
This also tends to level the boat out some when motoring.
