Thanks for the great pictures. There are lots of good ideal there - in addition to the hatch board storage. 
I have to ask: what the heck is the crank for above the galley in the last photo?

Graham,
Here is how I store my hatch board, it's very handy to pull it out , fold it n half and tuck it away in one fluid motion. Here are a few pics of the way I midified my galley. As you cam see I'm almost 1/3 done .
