You might think about a pram.  Wooden Boat magazine sells a precut kit for
one. From everything I have heard this is an excellent sailer and performs
well under oars/motor.

There are other pram kits around, some designed by well known marine
architects using stitch and glue construction.  Easy to build... You might
check these out also.

I would remind you that boarding a hard hull dink from a sailboat can be
fraught with adventure.  That's why inflatables are popular.
