Nell:

I will throw in my 2 pennies.

I do not have the pop-top cover, and for my sailing, it is not necessary,
but for southern sailing, a bimini is nice.   On Albemarle Sound on the open
water I did not see bugs.

Keep it simple.  Most of the things that you mentioned are add-ons that can
be added later if you want too.

The basic boat will do fine for the first year, two, or three.  You can
fine-tune it later when you better know how to fine-tune it.

Auto tiller?  And just starting?  How are you going to learn to sail this
boat?  Electronics change and get better every year.  If down the road you
want to add an auto tiller, there may be a better one available at that
time.

If your sailing is going to be on the sound, have Stan install jack lines
and attaching bases for safety harnesses, just in case you get caught in a
squall.
