1:  You can adjust the helm via the vertical position of the rudder blade.
Just play with the downhaul till you get the proper amount of weather helm.

2:  Sailboats are famous for their lack of control while backing.  It's best
to enter a slip bow first.  In the alternative you would need someone on the
slip finger to handle lines and fend the boat.
