Do grip the wire with pliers so you do not put "twist" into the wire,
basically, go to windward on a good wind day, lee side should be a little
loose but not floppy. Take in half, tack take in the other half, see how you
are doing that again.

However, not many of us get that technical.  A more basic approach is to
tighten the turnbuckles by hand (no tools) so you won't over-tighten.  Then
just go around and get them all about the same.  Take notice when you're
sailing if one side is more slack than the other when tacking back and
forth.  Unless you're a racer and need to squeeze every little 0.2 knots out
of her as you can, it's not that critical IMHO.
