Bill,
Actually, from my understanding of water storage on early ship voyages,
it did go stale and start to grow organisms.  The wiki article jives
with my understanding.  IPA (Indian pale ale) was developed to withstand
the extended voyage time from Great Britain to India.  The extra hops
used in IPA beers helped keep the beer from going bad during the trip. -

I don't know about that explanation.  Looks a lot like an urban legend 
to me.
