Hail Caesar,
I have a GPSMap 76S which is the B&W version of what you have, but I don't use it anymore because I upgraded to the GPSMap 478.  Great little portable unit with all the maps preloaded.  But I digress.  For the 76 model I always preferred to use it on my laptop and transfer as needed to the unit.  Plotting courses and waypoints is much easier on the laptop and it is very easy to transfer the data.  Even with my larger 478 I find that plotting courses is still a lot easier on the laptop.  I use the GPS to navigate - it is integrated with my autopilot so I don't have to do anything when I am destination sailing except keep the sails full.
 
Just my opinion, but I don't know how you could plot courses and waypoints on the small handheld unit.  Also, you can keep all the courses, waypoints and even the tracks on the your laptop to use them when you need them.
