Lou,
    Going from your description, and as some have found that, not all boats are the same.  Looking back at pictures of my 1974, the bottom shelf of the galley cabinet (on top of stringer #2) and the raised floor were two different pieces.
  
    As far as removing the old stringers...first I would stress safety.  Go to Home Depot or a like store and get a set of disposal TYVEX coverals, rubber gloves, safety goggles and a quality respirator (a paper dust mask is not adequate).  I would cut the old stringers out with a sawzall and/or use a 4" grinder (guard removed) with a high speed "Metabo" cutting disk.  Metabo disks are designed for metal so check when you go to hardware store to see if they have disks for cutting wood.  Although I have never tried it, a friend said to keep a water mist spray bottle handy to help cut down on the dust from the cutting. I'd rather have my filtered shop vac handy.

   Follow West System's manual #002-550 "Fiberglass Boat Repair & Maintenance" for putting in the new stringers.  You should be able to get this manual free on the west sywstem website. http://www.westsystem.com/
