Brad,

I'd be very worried about using a cable instead of the tongue extension to
get the trailer out to deep water.  You wouldn't have control over the
steering of the trailer while backing in and if you ever did get it to go
straight back into the water, it'd be an accident.  Maybe in a perfect world
with a perfect ramp, but if one wheel got hung up on a bump or a little hole
and the other wheel kept rolling...

The last few times I've used the extension without disconnecting.  I chock
the trailer tires and put down the tongue jack.  Then slowly pull out the
extension with a helper standing there to pop in the pins as the holes line
up.  It goes real quick.
